Readers of Seasons and Suppers surely know that I love soup! I’m sure it has a lot to do with the long stretch of cool/cold weather we enjoy here in Canada, but I also love the endless variety of flavours and textures. I like to think I can make a soup out of anything and by the looks of my recipe archives, I pretty much have :)
I thought I’d take a look back at some of the great soups from those archives, for a little soup inspiration as the cooler weather settles in. Do you have a favourite soup? Tell me about it or link it up in the comments, as I’m always looking for more!
1. Creamy Carrot Ginger Soup
Can you believe the gorgeous colour of this soup! Full of carrots, ginger and a bit of onion and garlic. It’s also made creamy with Carnation® Evaporated Milk.
2. Caldo Verde Soup
A soup in the spirit of Caldo Verde (Portuguese Greens Soup), but made with watercress and spicy chorizo.
3. Simply Perfect Roasted Butternut Squash Soup
My version of butternut squash soup that is, in my opinion, simply perfect! A great soup for Thanksgiving.
4. Classic Cream of Mushroom Soup
Classic cream of mushroom soup, ready to eat in only 20 minutes!
5. Harvest Vegetable Soup
This healthy harvest soup features white beans with onions, carrots, butternut squash, oven-roasted roma tomatoes and spinach. I sauteed a bit of pancetta with the vegetables, but that’s totally optional. In the background is a bit of heat, from a red chili pepper and some cayenne, along with some other herbs.
6. Paprika Spiced Cauliflower Soup
A different and delicious cauliflower soup, flavoured with paprika and featuring small dumplings! A traditional Hungarian soup.
7. Roasted Butternut Chowder with Bacon Croutons
The soup itself is lean and vegetable-rich, with roasted butternut squash, combining with carrots, celery, onion, and a few potatoes for a creamy texture, without the need for a lot of cream. On top are croutons, crisped up in bacon fat.
8. Fall Vegetable Soup
My soup features carrots, parsnips, butternut squash, tomatoes, kale and mixed beans (which includes chickpeas, black, kidney and navy beans).
9. Thai Curry Carrot and Pumpkin Soup
This pumpkin and carrot soup gets a Thai twist with Thai curry paste and coconut milk and some shredded coconut. I loved the shredded coconut in this soup but I’m guessing it won’t be to everyone’s taste.
10. 30 Minute Tomato Soup with Goat Cheese Toasts
This is my favourite tomato soup recipe. It’s made with canned tomatoes, so it’s easy to make up any time. I use my best canned tomatoes for this one, since tomatoes are the star here. Pleasantly thick and perfectly spiced, this soup comes together in only 30 minutes.
