Chocolate Cherry & Coffee Energy Bites

Delicious Chocolate Cherry and Coffee Energy Bites, that are easy to make, delicious and a great snack!

I love these energy bites. They are super easy to make, not super sweet and chock full of goodness. They are perfect to grab and go!

For these bites, I used Lavazza’s feature coffee this month – their Single Origin – specifically, the Kilimanjaro. This coffee is crisp and fruity, with notes of cherries, so it was a perfect match for the dried cherries in these bites. And yes, the ground coffee goes right in these bites, sprinkled on top of melted chocolate, then topped with a mixture of oats, coconut and whole almonds.

I made my own granola mixture, but you can make these bars even easier (and no-bake!) by using your favourite ready-made granola instead. You could also use dried cranberries, instead of dried cherries, if you prefer.

If you can't find dried cherries, dried cranberries would be a great substitute. You can make your own granola per the recipe below, or make them easier, by using 2 cups of your favourite ready-made granola.


Granola: (or use 2 cups ready-made granola)

  • 2 cups large-flake rolled oats
  • 2-3 Tbsp coconut oil melted (or vegetable/canola oil)
  • 1 Tbsp honey
  • 1 cup whole almonds
  • 1/4 cup flaked coconut
  • 1 cup dried cherries
  • 1/2 cup honey
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tsp fine ground coffee (or 3 tsp. of a medium ground coffee)


  1. Preheat oven to 300° Line a 7x11-inch baking pan with parchment paper, allowing the parchment to overhang the sides by a couple of inches (to make it easy to grab and pull out of pan).
  2. In the microwave, melt together the oil and honey. In a large bowl, toss rolled oats with oil/honey mixture and spread evenly on a baking sheet. Sprinkle almonds and over top.
  3. Bake in preheated oven for 10 minutes. Stir, then sprinkle coconut over top. Bake an additional 10-15 minutes, until oats are lightly toasted. Remove and allow to cool.
  4. Remove granola to a large bowl and add dried cherries and honey. Stir well, to combine. Set aside.
  5. Meanwhile, melt chocolate chips in microwave or double-boiler. Pour in to the prepared 7x11 inch pan and spread evenly over the bottom. Sprinkle ground coffee evenly over melted chocolate. Spoon granola mixture over-top and press down in to chocolate in to an even layer. Cover and refrigerate for 2-3 hours, then remove from pan and cut in to bites or bars.
