Blackened Cod

Delicious blackened cod, pan-fried coated in a homemade blackening seasoning. Serve with the optional quick, creamed corn or enjoy it as is or in cod fish tacos.

Make the corn

Add the corn and cream to a saucepan and simmer until tender.

Blend a bit

Use an immersion blender to break down the corn a bit.

Add jalapeño

Add the finely diced jalapeño pepper.

Add the Parm

Add the Parmesan cheese to the pot.

Add the cilantro

Add some chopped cilantro to the pot. Stir in a season. Keep warm. 

Cook the cod

Coat cod in homemade blackening seasoning and add to a hot skillet.

Brown and flip

Flip the cod and brown the other side. About 3-4 minutes per side.

Serve and Enjoy!

Serve the fish on top of the creamed corn, with more chopped cilantro and lime wedges.
