Creamy Roasted Red Pepper Pasta
This easy, creamy and delicious roasted red pepper pasta is ready in just about 30 minutes.
Heat oil, add onion, garlic and red pepper flakes. Cook until softened.
Add roasted red peppers, cream, Parmesan and goat cheese.
Puree sauce in small bowl with an immersion blender or a regular blender.
Return to pan
Return pureed sauce to pan and re-warm.
Add cooked, drained pasta to sauce and cook, stirring, 2 minutes.
Cook pasta and sauce together for 2 minutes, then serve with chopped basil and more Parmesan.
