Fall Minestrone

A Fall twist on the classic soup, this Fall Minestrone features butternut squash, kale and pancetta, together with white beans and pasta.

Saute Vegetables

Saute the onion, celery and carrots, then add some tomato paste and red pepper flakes.

Canned Tomatoes

Add canned diced tomatoes to the pot.

Broth

Add chicken or vegetable broth to the pot.

Butternut Squash

Add fresh butternut squash to the pot.

Beans

Drain and rinse cannellini beans and add to the pot.

Pasta

Add tubetti or ditalini or other small pasta to the pot.

Kale

Add chopped kale leaves to the pot.

Simmer and Serve

Serve garnished with freshly grated Parmesan cheese.
