Mini Pumpkin Dutch Babies
They are super easy to make and perfect for fall eating. Enjoy them for breakfast, brunch or breakfast-for-dinner. Uses basic pantry items, together with a bit of pumpkin puree (a great use for a bit of left-over pumpkin!). Everyone can eat at the same time! Top with butter, maple syrup and some chopped pecans or walnuts.

You will need ... All purpose flour White sugar Butter Eggs (3) Milk Pumpkin puree Vanilla (optional) Spices (cinnamon, allspice and nutmeg or just use Pumpkin Pie spice)
Combine ingredients in a blender or use a bowl with an immersion blender. Mix to combine and let stand while you heat a muffin tin in the oven. Re-blend batter, add some butter to hot muffin tin, then divide the batter between 12 muffin cups. Bake about 20 minutes and enjoy!
