RECIPE
A delicious, old-fashioned fruit buckle recipe. Use any fruit, fresh or frozen, single fruit or a combination of fruits.
Cream butter and sugar together, then beat in egg and vanilla.
Finish batter by mixing in flour mixture and milk. Spoon into cake pan.
Make the topping, then scatter the fruit on top of the batter, followed by the topping mixture. Bake.
1/4 cup butter 1/2 cup white granulated sugar 1 large egg 1 tsp vanilla 1 cup all purpose flour 1 1/2 tsp baking powder 1/2 tsp salt 1/3 cup milk 2 cups fruit, fresh or frozen Topping: 1/2 cup white granulated sugar 1/3 cup all purpose flour 1/2 tsp cinnamon 1/4 cup butter, cold
Best served warm with a scoop of vanilla ice cream.
