Potato Kielbasa Soup

RECIPE

A hearty and delicious creamy potato kielbasa soup, with vegetables and a bit of cheese. Great comfort food and a perfect dinner soup!

Fry the Kielbasa

Start by frying up the kielbasa slices until browned. Set aside.

Saute the veg

Saute the onion, celery and carrot  until softened, then add the flour and cook 1 minute.

Add milk and broth

Add the milk and chicken broth to the pot.

Add the potatoes

Add the potatoes to the pot (peeled or unpeeled). Simmer about 15 min. or until potatoes are tender.

Add the kielbasa

Add the reserved kielbasa to the pot.

Add some green

Add some chopped parsley (or chopped spinach, if you like.

Finish it up!

Finish up the soap by adding just a bit of cheddar cheese to the pot and stir until melted.
