Raspberry Lemon Cake

A delicious, simple raspberry lemon cake, that is perfect for enjoying any time of the day. This cake has a wonderfully light and fluffy texture and keeps well for days.

Mix eggs & sugar

Mix together the eggs and sugar with a whisk until light and fluffy.

Add the oil

Very slowly add the oil to the batter.

Add the lemon

Add the lemon juice and lemon zest.

Add the flour

Add the flour and baking powder mixture. 

Mix!

Mix the batter until soft peaks form.

Pan, top & bake

Add batter to pan and top with fresh raspbrries.
