Tuscan Tomato Bread Soup

RECIPE

A classic and comforting Tomato Bread Soup (Papa alla Pomodoro), easily made any time of year with canned tomatoes. A great use for stale bread, too!

Toast the bread

Cube the bread and pop into the oven to toast until golden.

Saute the veg

Saute the onion, celery and carrot  until softened, then add the garlic.

Add the tomatoes

Add the canned whole tomatoes and mash to break up.

Add the bread

Add the toasted bread cubes to the pot.

Add the broth

Add the broth to the pot (chicken or vegetable broth).

Basil!

Add the fresh basil leaves to the pot.

Simmer

Simmer the soup 15-20 minutes.

Whisk

Whisk the soup to break up the bread. Serve with Parmesan shaving and chopped fresh basil.
