Get the Recipe:Chocolate, Cherry and Coffee Energy Bites
If you can't find dried cherries, dried cranberries would be a great substitute. You can make your own granola per the recipe below, or make them easier, by using 2 cups of your favourite ready-made granola.
2tspfine ground coffee, (or 3 tsp. of a medium ground coffee)

Instructions
Preheat oven to 300° Line a 7x11-inch baking pan with parchment paper, allowing the parchment to overhang the sides by a couple of inches (to make it easy to grab and pull out of pan).
In the microwave, melt together the oil and honey. In a large bowl, toss rolled oats with oil/honey mixture and spread evenly on a baking sheet. Sprinkle almonds and over top.
Bake in preheated oven for 10 minutes. Stir, then sprinkle coconut over top. Bake an additional 10-15 minutes, until oats are lightly toasted. Remove and allow to cool.
Remove granola to a large bowl and add dried cherries and honey. Stir well, to combine. Set aside.
Meanwhile, melt chocolate chips in microwave or double-boiler. Pour in to the prepared 7x11 inch pan and spread evenly over the bottom. Sprinkle ground coffee evenly over melted chocolate. Spoon granola mixture over-top and press down in to chocolate in to an even layer. Cover and refrigerate for 2-3 hours, then remove from pan and cut in to bites or bars.
