Instructions
For oven pizza baking, I like to roll and top my pizza on top of a piece of parchment paper. Before baking, I trim the parchment around the pizza a bit. I then use a pizza peel to transfer the pizza (on the parchment) to a hot pizza stone in the oven. Note! Parchment won't work in a wood or gas-fired outdoor pizza oven. It will catch fire! For outdoor ovens, flour the peel lightly, then generously coat it with cornmeal before placing the rolled dough on it. Top the pizza quickly on the peel. Shake the pizza on the peel before launching. If it doesn't slide easily, it won't launch well, so add some more cornmeal underneath until it slides.
Place a pizza stone on the centre rack of the oven. Turn the oven on to 500F and allow to preheat with the pizza stone for at least 30 minutes.
Roll the pizza out into a roughly 12-inch circle. The crust should be thin! Drizzle the dough with olive oil and use a brush to spread it over the dough. Evenly distribute the shredded mozzarella over the dough. Scatter the goat cheese crumbles, then the goat feta, if using. *You can bake immediately, or let it sit 10-minutes or so, to allow a little rise back into the dough, if you like.
Bake pizza in preheated oven, on the pizza stone, for about 10-12 minutes, or until golden and bubbly.
Remove from oven. Scatter the pizza with chopped walnuts, drizzle with honey and add the arugula on top. Cut, serve and enjoy!
