I’ll be honest, even as a Canadian, I’m not sure how the combination of ham, bacon, pepperoni and mushroom became known as a “Canadian” pizza, but that said, it’s delicious, so I’m in.

For my version of the classic Canadian pizza, I’ve skipped the pepperoni, but kept the bacon, ham and mushrooms. I’ve also added an easy homemade maple chili drizzle, which really brings the sweet and salty thing home.

Ingredients and substitutions

A few notes about the key ingredients …

Pizza dough – You can start with homemade or store-bought pizza dough. For homemade pizza dough, I love Jim Lahey’s pizza dough, but it requires starting the dough the night before. For a quicker turnaround time, I love Roberta’s pizza dough, which can be ready to use in about 3 hours after mixing. Both recipes are easily found online.

Ham – Ideally, it would be nice to have some proper ham, but I didn’t want to buy a whole ham and I had a really hard time finding a ham steak, so I just defaulted to thick-sliced deli ham, which I chopped up. It worked just fine.

Bacon – Thick-slice double-smoked bacon is great on this pizza, but any bacon will work here. For thinner bacon slices, be sure not to over-cook it in the pan before adding to the pizza, so it won’t over-cook when it’s in the oven.

Mushrooms – I love cremini mushrooms for this pizza, but regular white button mushrooms will also work here.

Maple syrup – Real maple syrup is always the best option. I love Grade B maple syrup for full-on maple flavour.

How to make Canadian Pizza

  1. Start by adding the sliced mushrooms to a skillet and cooking over medium heat until just golden. Remove to a bowl.
  2. In the same skillet, add the diced bacon and cook just until golden. Add the diced ham and cook with the bacon briefly. Set aside.
  3. Make the maple chili drizzle by heating the maple syrup with the chili flakes in the microwave or a small saucepan, heating just until the maple syrup bubbles. Transfer to a small bowl and set aside at room temperature.

  1. Form the pizza dough into a 10-12 inch circle. Top with pizza sauce and shredded pizza mozzarella cheese.
  2. Scatter the pre-cooked mushrooms evenly overtop of the pizza.
  3. Scatter the pre-cooked bacon and ham over top of the pizza. Transfer to a hot oven/pizza stone and bake.

Recipe tips!

  • Even though I skipped the pepperoni (just personal preference), feel free to add some chopped pepperoni to the meat-mix if you like.
  • Be sure to cook the mushrooms until golden before adding to the pizza, as they won’t cook much more in the oven.

Classic Canadian pizza with bacon, ham and mushrooms. Finished with a maple chili drizzle, because is it really Canadian if it doesn't have some maple syrup?

Ingredients

For the maple chili drizzle:

  • 1/4 cup maple syrup
  • 1/2 tsp chili flakes

For the pizza:

  • 8-10 oz pizza dough, *see Note 1 below
  • 8 oz cremini mushrooms, sliced
  • 2-3 slices bacon, cut into 1/2-inch dice, preferably thick-sliced
  • 1/2 cup ham, cut into 1/2-inch dice, *see Note 2 below
  • 1/3 cup pizza sauce
  • 2 cups pizza mozzarella, shredded

Instructions
 

  • Make one 12-inch pizza. Double or triple as needed using the "2X" or 3X" buttons to automatically double or triple the ingredients.
  • Preheat oven to 550F (non-convection/not fan-assisted) or as high as you oven will go. ** If using a pizza stone, place the pizza stone into the cold oven before preheating.
  • For the maple chili drizzle: Add the maple syrup and chili flakes to a small saucepan or a microwave-safe bowl. Heat until just boiling on the stovetop or in the microwave. Set aside at room temperature.
  • Add the sliced mushrooms to a non-stick skillet and cook over medium heat until cooked and golden. Remove from the skillet to a small bowl and set aside.
  • In the same skillet, add the diced bacon and cook over medium heat until the fat has rendered off and the bacon is just starting to colour in spots. Add the diced ham and cook with the bacon briefly. Remove from the heat and set aside.
  • Tip! If you don't have a pizza stone, you can use a baking sheet. Place the parchment on a baking sheet to form and top the pizza.
  • Sprinkle a little cornmeal or flour on a large piece of parchment paper. Press the pizza dough into a 10 or 12-inch circle. Spread with pizza sauce, then scatter the shredded mozzarella evenly over the top. Scatter the cooked mushrooms onto the pizza, then the cooked bacon and ham.
  • Trim the parchment paper closer to the pizza, then use a pizza peel to transfer the pizza to a hot pizza stone. Bake for 8-10 minutes, or until golden.
  • Remove from the oven and drizzle some of the maple chili glaze overtop of the pizza. Cut into slices and serve with the remaining maple chili glaze.

Notes

Note 1: You can use any pizza dough, either homemade or store-bought. The dough amount specified will make one 12-inch pizza. Double or triple as needed.
Note 2: For the ham, you can dice up a ham steak or use leftover cooked ham. If neither of those is available, go with thick-sliced deli ham.
