If you love to make cold brew coffee at home you’ll love this recipe for vanilla sweet cream cold foam to top it off! It’s so easy and delicious and you’ll save yourself lots of trips out to the coffee shop!

Ingredients and substitutions

Half and Half Cream – 10% b.f. Half and Half cream is my favourite cream to use here. It brings just the right level of creaminess and froths up perfectly. Alternatively, you can use half whipping cream and half whole milk (3.5% b.f.).

Vanilla Bean Paste or Vanilla Extract – I love to use vanilla bean paste for the nicest vanilla flavour. Pure vanilla extract is also fine.

White Granulated Sugar – You’ll need white granulated sugar for the vanilla simple syrup that forms the basis of this drink.

How to make vanilla sweet cream cold brew coffee

  1. Add the water and white sugar to a small saucepan, bring to a boil and allow to boil for a couple of minutes.
  2. Remove from heat and stir in the vanilla.
  3. Transfer the vanilla simple syrup mixture to a jar and refrigerate until chilled before using. (Can be kept in the refrigerator for up to 1 month.)

  1. Add the cream and vanilla simple syrup to a small jar and use a hand-held frother to froth the mixture. (See recipe tips for alternative frothing methods.)
  2. Froth for about 1 minute or until the mixture if frothy with small bubbles.
  3. Prepare the cold brew coffee and pour the frothed milk overtop.

Recipe tips

  • The colder the cream the better the froth! I like to pop the cream mixture into the freezer for 5 minutes before frothing.
  • If you enjoy a sweeter iced coffee add a bit of the vanilla simply syrup directly to the coffee as well as to the frothed cream.
  • Be sure to use a frothing vessel that is large enough to allow the cream to triple in volume, but not so big that the cream is too shallow. Small jars work well.
  • The hand-held, battery-operated frothers will produce the best froth. They are easily found for only about $10, so if you enjoy making coffee drinks at home, it is money well spent. Alternatively, you can shake the mixture in a lidded jar or whisk by hand. The froth will not be as thick with the alternate methods.

Making ahead and storing

The vanilla simple syrup can and should be made ahead, so that it is cold when added to the cream for frothing. The simple syrup will keep in the refrigerator for up to 1 month.

If you find you don’t need all of the frothed cream, you can refrigerate it and re-froth it again later.

Ingredients

For the vanilla simple syrup (makes enough for 8-16 servings)

  • 1 cup water
  • 1 cup granulated white sugar
  • 2 Tablespoons vanilla bean paste or vanilla extract

For a single vanilla sweet cream cold brew:

  • 3-4 Tablespoons Half and Half cream, 10% b.f. *see Note 1 below
  • 1 Tablespoon vanilla simple syrup, *see Note 2 below
  • Iced coffee or cold brew coffee, How to make cold brew coffee

Instructions
 

For the vanilla simple syrup: (can be made well ahead)

  • Add the water and sugar to a small saucepan. Heat over high heat, stirring until the sugar dissolves. Bring to a boil and let boil for 1-2 minutes. Remove from the heat and stir in the vanilla. Transfer the mixture to a jar and refrigerate until no longer warm before using. Vanilla simple syrup can be stored in the refrigerator for up to 1 month and makes enough for 8-16 coffees.

To make a vanilla sweet cream cold brew coffee:

  • Make your cold brew coffee and pour over ice in a large glass or pour slightly cooled brewed coffee over a glass full of ice cubes. *If you prefer a sweeter iced coffee, add about 1 Tablespoon of the vanilla simple syrup directly to the coffee.
  • Tip! I find the cream froths better when it is super cold, so I like to pop the jar with the cream into the freezer for 5 minutes before frothing.
  • Add the Half and Half cream and 1 Tablespoons of the vanilla simply syrup to a small jar or container. The jar should be big enough to allow the cream to triple in volume, but not so big that the cream is too shallow in the jar. Using a hand-held frother, froth the cream for 1-2 minutes or until it is thickened into micro foam. (See notes below for other frothing options.)
  • Pour the foam over the coffee and enjoy! (Leftover cream mixture can be refrigerated and re-frothed later.)
  • Tip! The perfect cold foam is thickened enough that it will sit on top of the coffee. If your cold foam is thin, experiment with different frothing vessels or methods.

Notes

Note 1: Or use 1/2 whipping cream with 1/2 whole milk.
Note 2: If you prefer a sweeter iced coffee, add a Tablespoon of the vanilla simple syrup directly to the coffee, as well.
