When it comes to Easter dessert recipes, hot cross buns are classic, along with carrot cake or carrot cake loaf. I also love anything lemon at Easter, so I’ve included some of my favourite lemon desserts, as well.

Classic hot cross buns, that can be made with any combination of raisins, currants and/or peel. Makes 9 buns in an 8×8-inch pan. Double recipe for 18 buns in a 9×13-inch pan.
